Curry curry in a hurry, a perfect lunch box treat,
Loaded with spices and lovely things, this salad can’t be beat.
Crunchy celery, capers and apricots are all friends here,
Pile it on toasty bread and have a splendid sandwich, my dear.
This is delicious and full of good lean protein. I like tuna packed in spring water, not oil. Eat a scoop on crisp lettuce or make a hearty sandwich on wheat bread with Dijon and baby spinach. Yum.
Curried Tuna Salad with Capers and Apricots
10-12 ounces solid white albacore tuna, packed in water, drained
2 medium stalks celery, diced
4 dried apricots, chopped
1 tablespoon capers, drained
2 tablespoons mayonnaise (or plain Greek yogurt)
1 teaspoon curry powder
1 tablespoon red wine vinegar (or rice wine vinegar)
Salt and pepper, to taste
- Combine all ingredients in medium bowl. Serve over mixed lettuces or on toasted whole grain bread with Dijon mustard and baby spinach.
